It's Really Not That Weird


Okay, before you completely write me off as an oddball, this snack isn't that crazy. Have you ever dipped carrot sticks into peanut butter? This is kind of the same thing. I mean, we throw peanut butter into and onto a lot of other things. 

apples. bananas. oatmeal. noodles (think pad thai). celery... 

Carrots and celery are served together as a side in tons of restaurants; granted, they're served with ranch dressing.  But if celery can be dipped into peanut butter, then so shall carrots. And just for the record, my 9 year old picky eating nephew does the carrot-peanut butter duo quite often. 

Now that I've convinced myself even more that this sandwich works, I hope you try it for yourself. And that you find something to enjoy about it. Whether it's how the natural sweetness of the carrot presents itself, or just the fact that you're getting 3/4 of your daily vitamin A needs. 

Peanut Butter and Carrot Sandwich

2 slices of whole grain bread
1-2 Tbsp peanut butter (no sugar added. just peanuts and salt. come on, for the full effect.)
1/4 cup shredded carrot

You know what to do! 


Fun Fact: the fats in the peanut butter help your body absorb that vitamin A.
